Stir-fried Milk With Egg Whites

In chinese food, this is very famous dishes
Ingredients:
3 pcs Egg whites
1 pc Egg yolk
300 ml Stock
150 ml Fresh milk
5 tails Shelled shrimps
50 g Skinned fish dices
Cooking methods:
Dice the shrimps and fish. Blanch them in a pot of boiled water for about 2 minutes. Scoop them out and set aside.
Mix the egg whites, stock and fresh milk together. Remember not to whip them up.
Heat up a skillet with enough oil. Pour in the egg white mixture and stir until cooked. Strain though a sieve. Rinse them with some water. Drain.
Heat up another skillet with a little oil. Add in the cooked egg white and milk and stir briefly. Add in blanched seafood. Stir evenly and dish off. Place the egg yolk in the middle. Stir up the egg yolk when serving.
