Papaya Spareribs Soup

 Ingredients:

2 slices ginger
1-1/3 lb papaya
1-1/3 lb spare rib
1 tsp bitter almond (Chinese Apricot Kernel, bitter ones = "north apricot kernel") 
2 tbsp sweet almond (Chinese Apricot Kernel, sweet ones = "south apricot kernel")
 
Cooking methods:

Wash and halve papaya. Core, remove seeds and cut into thick shreds.
Wash and parboil spare rib for 5 minutes. Remove and rinse.
Put 9 cups of water into the pot, then add papaya, spare rib, sweet and bitter almonds, together with ginger, bring to boil. Cook over mild heat for 3 hours. Season with salt. Serve hot.
